Helmet does not have a
no sign like Torso and Legs. So I can change the helmet but can't have no helmet.

Suit and helmet are mandatory (as they are critical to your survival) so you cannot remove them.
On the other hand, if you go on your Holo-Me, you can choose whether it's Always On, or Emergencies Only, which means that when you are in pressurised environments (stations/settlements) the helmet is hidden.
