It would be nice to be able to dock on a large ship that itself jumps between systems. Either you could jump on a random one, log out and the next day, see where you have randomly been taken to, or, you could check the ships route, and disembark when you reach the system (or near) the system you wanted to go to.

This is already ingame. They are called Flight operations ships. You can get the flight schedule from scanning the ship or docking and checking starport services.
Even the non dockable bulk freighters and tankers have flight plans (Not all of them though) Below is an example
