General Cockpit hand animation settings

The ability to change the options for hand animation behavior. I.e., let us change which animation is associated with specific ship axes.

For example, if I have pitch/yaw on my X/Y stick axes (a popular setup in the community), the in-game movement doesn't match up since by default the X axis animation is "bound" to roll. This is not that big of a deal, but it does break immersion a bit, especially in VR, since the rest of the animations are synced with my actual movements.

(No, this isn't high on my list of priorities at all, but if it were something that could be easily implemented, it sure would be a nice little touch.)
