Precisely this sort of thing was the subject of a DDF discussion on salvage which has not made it into the game at this point, except in a very minimal way. Salvage was originally presented by the devs as including cutting up derelicts using mining lasers and gathering the bits of metal, cargo and modules. A lot of the DDF argued strongly for an even more sophisticated system.
Whether all this is permanently on the cutting room floor or will be overhauled later, who knows? I can't see why not. Maybe when first person activity is possible salvage might come back in a much enhanced manner.
