I have no idea why but often times while trying to pick up all the opals or cold diamonds from a mother load, some limpets will go offline only after picking up one item while others will survive and pick up many. Why does this happen? Is it a bug? Or is something killing the limpets prematurely?

If you have an item / fragment targeted, the limpets pick it up and then self destruct (based on an assumption you literally wanted to collect THAT thing).
If you make sure you have nothing selected as a target at the time of launching the limpet, they will pick up everything in range for their lifespan.

If you target a mineral then launch the limpet I think itll only pick up that targeted item then self destruct.
You can also knock into them with your ship which would kill them.
