There's literally no good reason for them to eat crap beyond the novel claiming the Procompsognathus (an entirely different genus) ate crap, and then they only ate crap because they were apparently smart enough to know they needed lycine in their diet and waste (specifically fresh waste, not old) was their only source...
To be fair, it was explicitely stated in the books that INGEN breed the compies to clean up waste. I wouldn't mind them having some use helping to clean up carcasses and stuff, but I do agree that we don't really need to add poop to the game just to give them something else to do.
