I keep getting constant disconnects from the game with various colors and animals when coming in and out of levels of travel speeds, when transitioning between space and planet, when opening up commodity or mission boards, and more. I know it's not my internet connection as I have a stable 1Gbps connection for everything else and I don't suffer any disconnects in games such as WoW, ESO, Overwatch, CoD, etc, and I am very close to just throwing my hands up and uninstalling the game.

Do a verify files from the launcher?
I used the Steam function and it said no files had to be reacquired.
if the game works then the file structure is usually sound
it is connection related and as you say may not be your end
suggestions
try connecting via a gaming vpn (as that can skip around any mid ground amazon ecs server bottlenecks)
changing to a static ip if not already
lowering your mtu level
port forwarding
ruling out anti virus
