I couldn't sleep last night thanks to the heat, but while trying to sleep my brain farted and came up with an idea regarding your crewmen in the ship.
Three ways to have/become one:
-(Player)Answer a BB mission to temporarily (as long as you like, or the mission wants) to join a larger ship's crew.
-(Player)Accept a CMDR's offer to join their ship.
-(NPC)Hire an NPC
What a crewman would do (open to suggestions, ones with * have been extracted from a reply in this thread)
-Operate turret hardpoints. The NPC based ones would perform depending on their combat level, making it more worth it than the ship's computer. Players would get a separate camera to play with.
-Flag targets of interest on the map. (This should be a wings feature too, imo).
-(Player to Player Only)Offer to donate some insurance money, which becomes tax deductible somehow later.
-*Managing ship functions such as Power Management
-*Plotting and managing routes when a detour is needed
-*(Player to Player) Serve as a Player taxi passenger. The Passenger can pay a suggested fee.
