Something like the
Stream Deck might be useful. It requires Windows 10 so I'm out of luck running Windows 7. Some players have created
ED icons for the buttons. Logitech's
Farm Sim Panel has also been used by ED players.
And the images of them shows directly the problem of this things: try to use them blind and find directly the right button.
On the X52 HOTAS it is not a big problem, every Button is different (beside the 3 switches in the base on the Joystick part, but because it is only 3 of them you find the right one fast enough for the functions), so you can easily find them blind, when you play some hours with it.
On such Button Boxes all is symmetrical and that makes it difficult. That's why I directly think on DiY, because the VR market is to small right now for such specific extra Hardware that is designed for VR.
Yes, I'm not that concerned about the wiring (I've done arcade controllers etc in the past so that will not be a problem). But I need to figure out how many buttons to use and where to place them. I'm thinking maybe a foot switch for Flight Assist might be a good idea. I'm also taking a lot of inspiration from this guy:

Yeah, that is more what I had in mind first, but yes, that is a cool project and he did really think on the most stuff what you could easily forget.
Also the position of the switches looks not bad.
Now I want ot build cockpit for my own again. Had already plans years ago (back then more for monitor gaming) and over the last years I collect enough tools to make one. Maybe a project for next year.
