I'd like to make my own educational posters / videos for my zoo, like you see in real life. Do we know, will Planet Zoo have that capability to import your own images/videos, like you can in Planet Coaster?

Whilst we don't know for sure I think it's a reasonably safe bet if it's possible in Planet Coaster it would be in this game given the similarity of them from what we've seen so far.
