I would like to see options to customise the viewing platforms (regular, tower and truck) in much the same way you can customise the shops. So, for instance, having the regular viewing platform as appealing to normal guests, but adding upgrades to make it more appealing to other types of guests. Maybe supplemented with background mechanics so that some parks overall appeal depends on having more of a certain type of guest in challenge mode.
Related, I also think the tables that and chairs you can put top of the shops should be more than cosmetic. They could turn the shop into a small view platforms to increase the appeal of the shop. But have this as a specific upgrade that needs to be researched.
I would also like to see the level of fences tied more to the security rating of a dinosaur. My take would be that when a dinosaur forms territory it will continue to do so until stopped by the fences. But if the fence has a lower rating than the dinosaur it will simply break through to continue expanding its territory.
