Is there a way to turn off the day night cycle? It can be very hard to see while building in the dark. I posted here because I have looked all over the place and haven’t found the option.

You can change the opening time in your Zoo overview to only daytime and that will keep it from getting dark! 
If you click on the weather button at the bottom you can turn off weather and choose a time of day that usually freezes it in place, even while unpaused. I only know this because I initially had the opposite problem, where the time wasn't changing. I usually have mine set to midday while I'm building.
That's for Sandbox, not Franchise, so the earlier suggestion by Frida is more comprehensive.
