I was hoping this would be implemented in the game by now, but it still isn't. It's not a huge deal but I would sometimes really like the option to have one coaster with different coloured trains on it or have the option to colour every individual car of a train differently. This was possible in Rollercoaster Tycoon at the time.
I don't know how complicated it would be for you guys to implement something like this, but it would be nice to have a coaster that runs with for instance a blue and a red train
