There are a lot of content creators I like to watch. Mostly alongside doing other things. As a German I mainly have watched German stuff. From these my Top 3 are Gorobai, ManuLM80 and Rakras. But I also want to mention SimonsterGG, StephaN1, nik94, KeanTV and EinfachTommyDE. In case of international stuff I really like the videos made by Leaf.

Mine is definitely Rudi Rennkamel. He's an outstanding builder as probably all of the YouTubers mentioned in this thread. But he has an incredible sense of humour that always make me laugh when watching his videos.
Runner up is DeLadySigner. I also love her content!
