That looks amazing and that castle, wow! My only point of critique: all the buildings seem way too big compared to the size of the guests. Since themeparks in particular are all about 'faking' they use a technique called false perspective to make small buildings appear larger (and in some cases make large buildings appear smaller). A simple way of implementing this in the game is if you have a building with multiple floors, make each floor smaller than the previous. Likewise, windows, and basically any details will get smaller the higher up they are (this is almost impossible to implement in the game since we cant scale assets tho). Also, the games scale in general is a bit 'off'. Standard walls are 4m, which in reality is really tall for normal buildings. A normal floor would be 2.5m to 3.5m, the latter would be pushing it.
Anyway, architecture and things like perspective really interest me so I thought I'd share it, since it will increase the look of buildings to the next level (literally[tongue]). It is also a technique that is very rarely seen used in Planet Coaster in general.
