Title speaks for itself. Also, can I just buy this stuff somewhere? Or am I forced to mine for the material.

No list needed. There's one in the game.
Just look at the synthesis tab and what you can make there and it'll show you type and quantity of each material needed.

And yes, you need to find everything on planet surfaces, AFAIK.

I believe eventually non-Horizons players will be able to find/steal/buy the required synthesis materials as well.
