All these electrical bits and bobs that I've collected from behind maintance panels on downed satelittes and minor wreckage and crash sites....
Do I need any of these materials for anything engineering-wise or do I just sell them to the bar-tender?

A word from the wise and experienced commanders out there would be most appreciated, thank you.

Probably.

The first thing to do is determine what upgrades you want. You can then decide which to keep, which to sell, and which to trade.

Many Odyssey materials can be traded, except the data.

Inara is very helpful for this:

There are 3 cats of Ody mat. Chemicals, Circuits and Tech. Circuits tend to be scarce, except from planet POI. You will probably need them but don't fall into the trap of filling your inventory with circuits since they share the same space with the other 2.

Anything that goes in your cargo hold should be sold, anything that goes in your material storage should be kept for engineering until you're full up with it, then you can trade some at a material trader for spaceship materials or a bartender for on-foot materials.
