I can't delete it. Removed EHMPresets folder, EliteHUDManager.exe and EliteHUDManagerconfig.txt as it is said in the readme, but the color doesn't change no matter what I do. Any idea how to deinstall it?

I don't know the software, but it has likely been uninstalled but has left your graphics configuration file set to the colours you chose. Check the GraphicsConfigurationOveride.xml file.
