I've found the ability to control the ship while in 3rd person camera mode adds an interesting dimension to VR.

FAOFF flying while having an OOB experience is... interesting (and can make for fairly dramatic 2D videos too!) VR doesn't have to be all realistic and 1st person all the time.
In terms of controlling the ship this is not so difficult in the end, though, after all it's just the seat shifted a little bit to the side.
How about something more challenging...

Standing on asteroids / planet surfaces is something we've always been able to do with the debug camera, but now we can lock the camera into place and remote control the ship like it was a drone!
Turn flight assist off and that's what I call an interesting flying challenge.
