I would like there to be a faster way to switch between day and night. Whether that be a further speed option that does 1 hour/sec or an option to skip hours/days/etc.

I think having the option to switch from day to night and vice versa only when the gameplay is paused would be ideal for when constructing. I recall they had something similar to this option in the live stream they did where they used the debug console. Maybe have a slider that goes from day to night once the game is paused where you can choose what time of day you want to see so you would get the complete lighting range from dusk till dawn.
