Newcomer / Intro Fat Freddy keeps Interdicting me

...and when I submit to the Interdiction, he blows up my ship.

Don’t submit, if you win at that stage you are unlikely to see him again, if you escape him after submitting he will come after you again.
But if you lose at that stage he will have longer to blow up your ship.

He's followed me into Solo Play!
NPCs are allowed to do that especially if they are part of the mission.

I've completed the Mission, so hopefully that's the end of him. He was 1/9 in an Anaconda. I think that was a bit extreme.
Probably a high ranked, well paying mission. Random NPCs are based on your ranks mission based ones are tied to the level of the mission.

You were flying a high danger, high payout mission. FF was only the first - if you had succeeded on killing him, 8 others would have been waiting offstage to complete the job.
You also should have received a message from your mission giver telling you that Freddy and his friends are going after you and you would be getting a little bit of extra money if you could dispatch them.
Cheapskates.
Considering the usual payout for a pirate kill mission, they just want to save the money. You're bait, you and your cargo are expendable. Just leave Freddy and his friends watching your exhaust and tell your mission giver that they should pay pirate killing prices if they want to get rid of Freddy - here's your cargo, I want my money.

You'll still encounter NPCs in solo play.

Also, if you submit to the interdiction, just throttle up, point in the direction of where you're going and boost and spin even when you're waiting for your FSD to charge to get you back into super cruise as the faster you are, the harder it'll be for them to catch up (also the spinning will throw their aim off and you should be able to get back on your way with minimal damage)

I tend to throttle up and boost as soon as I hit normal space after the drop, looking for and heading towards the direction marker can wait until after I am moving fast away from the NPC.
