Fundamentally impossible given that a) the frame shift drive is rigidly mounted to your ships structure, and b) the drive projects a gravitational warp field in a specific shape to allow matter within the field to propogate in a “forward” motion. The field cannot be modulated therefore the only way to change direction is by pointing the ship, and therefore the drive, in a different direction.

Not sure your logic holds. The key point here - is by what means is your ship able to change direction in supercruise? If there are directional thrusters, there is clearly some compensation going on which could be removed. I accept this is all going on whilst there is a constant forward thrust, but that doesn't preclude changing behaviour whatever is allowing the change of direction.

BTW I am in no way advocating for this feature to be added to the game.
 
I believe this was a thing in early alpha, IIRC is was in one of isinonas videos.

SC is the only area remaining where actually getting on your target's six (and keeping them off yours) is important. A little drift would be okay but I'd prefer to preserve the general forward only nature of SC.
