FOV setting for makeshift vr

I'm using a 7" screen with side by side in game, as a secondary monitor. The lenses and visual effects work, but the words are illegible, which I imagine has a lot to do with the screen quality.

However, I don't really know what the fov of the game should be actually, and I think that'll alleviate quality issues. Thoughts on what fov I should be using?
