Previously never had an issue with the cameras but for some reason no internal or external cameras work no matter what key I map to.

The feature does work, so it's not a general bug, hopefully it should just be a simple oversight.
I have 'ship - toggle camera suite' mapped to a single key press (` in my case), and SRV - ditto is left blank. The same key works for both, and toggles between the suite & normal game view. The setting allows two different control assignments, either should be able to work but for testing, just use one & confirm you can enter the camera.
If you can enter the camera but not change camera that's next on the list.
