Newcomer / Intro fuel scooping

It deploys automatically anytime you're close enough to use it. I've only used mine on suns. I've not tried gas planets so I don't know if that works or not.

Yeah, it'll deploy automatically. You're in a pretty good position to scoop right after a jump. Just aim to one side of the star until you start scooping and try to stay in an orbit that is far enough away to keep you from overheating.
Note that some stars are too young, too old, too big, or too small to scoop from safely. The yellow, orange, and white main sequence stars are mostly fine. The white dwarfs are not.

Yep, it's fully automatic 
Be careful when scooping... aim for a spot just above the green arc that displays around the sun... going below that arc will kick you out of supercruise and you will have to wait till you drive cools down, then escape the sun's gravity by engaging it again and lining up with an escape vector... all the time in curing heat damage... better just to avoid that altogether
Once close enough, you'll see two bars displayed... one is your temperature, one is your fuel tank. Fly the ship to follow a curve over the sun's surface (but avoid the green arc), and watch the two bars... the fuel tank bar will also show the rate at which you are scooping... the lower, and faster you travel, the better the rate.
You can safely scoop with no damage at heat levels up to 150%, but anything above that and you will start to get heat damage. I always scoop until the temperature reaches 140%, then fly away from the sun... the heat will climb a few more degrees, but then start to drop again. Just repeat the process till your tanks are full.

I discovered a technique to scoop safely by heading straight towards the star until heat builds up to 98-100, then I throttle down to minimum 30km/s and scooping speed remains at/near max while heat buildup stops or greatly slows.
If you have a top end power plant you can keep your throttle in the blue zone and whip around the star untill your full may have to dip out a bit if your heat gets to 120%. my eagle I can go from almost empty to full with out doing damage to my ship because my power planet has low heat build up and I spend more time fueling up.
