Galaxy map - orange hats on stars. What are they?

Those stars are in range of your hyperdrive.

They're dynamic - so they would be in range if you were, with your current ship and fuel level, in the system that the map is focused on, not necessarily in range of where you are now.

Which makes them helpful trying to pick a route through the sparser reaches of the galaxy.

Also works with setting FSD boost in the 'jump data' part of the second tab of the map.

Remember the important part (which I wasn't aware of):
