Where can I go to find out how to use the Galaxy map to travel, say, from Delphin to Sol?

Open Galaxy map, there are four options in the left menu. Goto navigation and search your destination, activate as target destination and you can decide if you want as fast as possible or take the trading route to your destination.

thanks. but the destination I select - if it's a long way away - doesn't then appear in the list of destinations I can lock and fly to, no?

Once you have found your distant target, step back through the plotted route writing down each system's name until you get back to where you currently are ... then start jumping!

You'll need to make several jumps if the destination doesn't appear in your list of possible jump destinations.
The jump destinations list is only what is in your possible jump range.
