Does time played in any Beta get credited to your main account in the "live" universe at some point? Or is that gone too on reset?

No, never. The Beta data dies when the server dies, and they never cross pollinate.

But when the servers are taken down, it doesn't even stay in Beta!

As others have already said, no. Progress doesn't carry across, since it's a beta test and not an early access/head start to the progression with new content.
