Here's an idea I had on how to expand the foliage options. It includes a new tree type called the giant tree and 1 new tree for each different biome.
Here are some examples of types of trees that could be added.

Tropical biome: The return of the big tree from jwe1

Temperate biome: Oak tree

Taiga/Alpine biome: Giant redwood tree

Desert biome: Acacia tree
