I ran plasma accelerators on my vette for a while...they were nice against larger vessels and TLB+dispersal, or alternating dual-TLB, often annoys the snot out of people. However, the damage vs. heat vs. WEP was a bit lacking on my focused ones while the projectile velocity on my efficient ones made accuracy against smaller ships, or when under TLB fire, a major issue.
Huge MCs were a bit better and I might play with fixed long range or overcharged incendiaries again, but since so many of my engagements are fairly close in fights against medium ships blasting me with TLB, I've largely settled on beams as my primary damage dealers.
Regarding secondary weapons, I like feedback cascade rails in the small hardpoints, turrets with useful specials (especially something with corrosive) in the mediums, and I switch around the large hardpoint as it suits me. Right now I'm experimenting with some of the weapons that have just been given large variants as of 3.2.
In the end, it's really going to depend on who you expect to fight and what they are in.
Cmdr Morbad flies a Vette and uses c4 beams in PVP, pretty successfully from what i gather.
Not sure what he uses in the other slots.
Black Betty's Revenge usually does alright, all things considered.

A bit sloppy with my new fire groups in the first video, but I'll probably have the hang of it just as soon as I get bored of the seeker and decide to pull it for something else...
