I would love massive objects in game to drag you in if you get to close forcing the pilot to fight his way out or die.

What would there be to fight though? Either you have enough acceleration to counter the object's attraction, or you don't. The outcome is entirely deterministic with no struggle involved. The only skill would be in knowing the minimum safe distance.

The gravitational attraction force between two point masses is directly proportional to the product of their masses and inversely proportional to the square of their separation distance. So different types of star with different mass and densities, different jump in locations close to the centre of mass or further away, Class of FSD and the ability to reach escape velocity.

Yes get to close and pass the point of no return then you are guaranteed to be pulled in with no way to escape with what you have onboard. But from a gameplay perspective, the closer you are the harder it is to pull away from the object (the force pulling you will scale with distance and mass), get to close and you are pulled in at which point you need to switch to emergency engine power (synthesis infusion (need materials)) which damages the engines, Drop cargo and weight (like fuel), Maybe use the gravity of a binary body to gravity assist an escape vector, quickly chart a high-wake jump out of the gravity well to a neighbouring system because FSD isnt cutting it (engine damage), the closer you are your ship will suffer from hull stress and internal breaches. Something.

I seem to recal the escape vector when trapped within a gravity well in ED required me to chase it once upon a time. Now its locked in a single position, (maybe i recal wrong, it was years ago). So i think the mechanic once had more to it than it does now.

Ships trapped in Gravity wells are a staple in science fiction. But ED lacks that drama.
