If you're like me you occasionally like to select a random guest and watch them explore your park. Whenever I do this I am inevitably frustrated at the choices guests seem to make moving from one attraction to the next. I see guests head to a coaster in a far corner of the park (good) but, after riding, will ignore other nearby attractions and, instead, go a great distance to another ride. Or sometimes they get on a monorail, ride that to a distant stop and then walk back to where they started.
Now, my suggestion: In the individual guest info panel, have the option to create a Guest Itinerary. The UI could work the same way as the triggers. Perhaps a +Location button then you click an attraction. You can create a sequence and the guest will go from one to the next, in the order you define.
The benefit to this is really at the individual guest level. All other guests would do what they do now. But having granular control over an individual guest would allow us to watch guests experience the park the way a real person would.
I have lots of other ideas that build on this (e.g. how groups are handled, toilet and hunger handling, etc.) but this is the basic thought.
