As others have said the imperial courier is the favourite without having to make any real compromises. Viper/cobra mark 3 is always good.

You also mentioned the eagle which while I can't make a particular argument for based on slots, top speed or hardpoints, but it's a fantasticly fun ship to fly. Highly recommended.
