Where is everyone? I was in Eranin when I came across this dude.

If you're looking for someone to play with, then check out the Mobius PvE group closing in on 10.000 commanders. The dedicated forum has an in-game friends list of approx. 350 commanders I think. If you join that, you'll always have someone on the galaxy map to chat to, or wing up with.

2 Things OP.

Either you were in areas with no players
You were victim of ED TERRIBLE instancing and multiplayer design.

I expect the later

I was in Vaka yesterday having a lot of fun, me vs about 8 other players in SC.
My Wing arrives, we form... after that.. Nothing... we totally relogged twice and managed to find 1-2 players each time.

Gave up, went to bed.

While passing through civlization on numous occasions I've gone back and took a small detour to many "old spots" I still remembered were extremely busy places back in time.

I as well found them basically deserted - and checking the Traffic stats usually confirmed it.
Just seems those areas aren't the busy spots anymore that they used to be.

Still felt nice seeing the old names again, last time I undocked there for regular business I was in a Sidey or a Hauler. Old times...

Going back to Eranin was very nice and nostalgic lol do new players still spawn there or are they all over the place?

If you want to see a lot of players, go to one of the many places that sell rares. Pick one that is close to the parent star as many of the rare traders wont go deep into a system as time is money!
