150,000 "handmade" stars, culled from existing stellar catalogues and current observational information is just the start. Then there's the other 400 billion or so stars that are procedurally generated. They aren't simply random, they follow "rules" that we see in observations today. Higher star density in galactic arms, lower density in the rifts, older stars outside the galactic core, younger stars in clusters... it's all consistent.
In a recent update, the devs said that there has been so many hundred thousand systems visited, which accounted for a fraction of a % of all stars. FD don't need to go adding more stars just yet IMO.
