Essentially, the same thing as delivery missions, but with a smaller range of high-value cargoes, and more risk, in the form of usually-unavoidable combat. here are some examples.
"Armed trader required for gemstone transport and sale."
Essentially, here you'd pickup gemstones as you would for a delivery mission, but instead of delivering them to a starport, you'd deliver them to a buyer. This buyer can take the form of the old "Seeking Luxuries" signal sources. The buyer, considering the types of commodities they're purchasing, should be equipped well - if the faction is Alliance/Independent, an Anaconda, and for Federal/Imperial, a Corvette/Cutter, each with good shielding and hull integrity. At this point, a wing of pirates can attack and attempt to steal the gemstones from you. You have to destroy them and save the buyer to complete the transaction, else you're left with now 'STOLEN' cargo.
Quick tangent - I once was flying through an Anarchy system (can't remember where or when), but I saw a wing of 14 NPC ships, 13 cobras and a Python. Having something like that attack you, perhaps on a smaller scale, in this mission would be really cool.
"Xenobiologists require Transport for hazardous alien samples."
Deliver Thargoid Biological/Technological samples to some location - perhaps an obscure planetary outpost or whatnot?
The twist on this mission would be the chance for Thargoid interdiction en route. Hopefully the average joe wouldn't be attacked by angry Hydras, but a big pile of scouts and maybe even a Cyclops here and there would make for a very dangerous transport job.
"Seeking discrete transfer of indentured servants."
Here's an example of a mission for a larger trade ship - deliver a large quantity (>64?) of slaves to some location. The twist on this one would be that it's for an openly Federal faction (not a pirate/anarchy faction), who are, well, corrupt to the bone. During this mission you have a very high chance to be intercepted (again, without a chance of entirely avoiding conflict) by Imperial security services who are investigating reports of stolen slaves.

The reason I thought of this is because I'm sitting near Alioth in an Anaconda with 176t of cargo (48t being corrosion-resistant racks), and while I want to use it to deliver hot cargoes, the only way to do that is to somehow find the worthless toxic waste commodity, or go to Thargoid sites.
But I'm no collector boy. I'm a delivery boy.
