We have the ability to see planetary coordinates in the form of lat/longs, but no way to easily target them. I would propose that from the planetary map (zoomed in from the system view) we could a: see the lat/longs and b: select a specific set of coordinates which we could then see as a target icon from space to make it easier to find previously explored locations (or a way to share locations with other people - "check out this fantastic view at these coords!" ).

Sure, only if the player has "Explored" the planet first else it can be a way out for Wings to not need a Advanced (at best) Discovery Scanner so they gain an extra slot gratis!
