ParaHandy: When I do that, nothing happens.
If it's supposed to create a shortcut on my desktop UI, there are two issues:
1) I'm running i3 over Linux. It's a tiling window manager - desktop shortcuts don't exist in its universe.
2) I don't see how that could solve the problem unless you set some kind of interface-selection option in the shortcut properties, which you haven't told me needs doing.
What I think I need is a way to tell Stem I don't have a VR rig, and it should simply run the non-VR version rather than prompting me.
