I have quite a few ships with cosmetics that I've sold. Is there a way to see all my cosmetics other than re-buying all ships in the game?

If you login into the game store it will show if you have already purchased a cosmetic. There is no convenient list though.
I also have skins from watching streams, so they wouldn't show on the store page I guess. It's just a silly situation.
There used to be a proper detailed list, but it was disabled several weeks ago.
You don't have to buy ships to check what cosmetics you have though; when you load the game, the Main Menu has a section called Game Extras. If you select that and go to Vehicle Extras, you can select a cosmetic type, eg. paintjobs, then select a ship type, and it will show you a list of paintjobs for that ship available for purchase, and at the bottom of that list is paintjobs for that ship that you own.
(The above method shows cosmetics you have even if they are not available in the game store.)
Same with decals, ship kits, suit cosmetics, etc

I can't conceive of how this would benefit them though.
I say that about most of the gameplay updates.
I think that the decision to not let you have access to the actual transaction record for your virtual currency purchases is borderline illegal. Consumer protection laws should allow you to have evidence of your purchases but when spending Arx unless you take screenshots of every transaction you have no proof.
The transaction records exist (you can see the reference number in your user portal) but you can't view them.
Removal of the "entitlements" pages was a really poor move in my opinion.
