How do mere mortals hitch a ride?

How do I find out which Fleet Carriers are travelling to a particular destination, what the destination is and when the FC leaves?

And once I’ve found all of that, so I just dock with the FC and wait?

As for finding out where they go - 15 minutes before they jump, that is announced in system and on the FC info. Doesn't help a lot, though, if you're on different timezones or want to select a FC going to a specific destination. So you'll need the carrier's owner to tell you what they are planning. External tools/websites which would make it easier for carrier owners to announce their schedules are under development - the Fuel Rats have something cooking there.
Otherwise, you'll either have to ask or read the forum.
After that, yes, you simply dock and wait.
