Just being picky on terminology. But you are referring to commodities, e.g. water, cobalt, platinum, painite.
The reason why I'm being picky is because you can also mine materials, which are a different thing altogether. For example, carbon, arsenic and tungsten are all materials that can also be mined. The distinction is how you store these on your ship and how they are traded and/or used.
If you do want to mine for materials, check out testing of mining for materials.

Water, oxygen, and all the rocky types cobalt/rutile/coltan can be bought and handed in as missions
Often in the same station where you get the mission.
Some players exploit hundreds of millions from this without even leaving the station. Personally, I think this has got to be one of the most boring possible ways of "playing" the game.
I believe the missions system has been fixed so you can't do this anymore. If you have a mining mission, you need to mine that item. I had four units of palladium in my hold and took a mining mission for two palladium, but the system would not accept the ones in my hold.

You may have just needed to reopen the missions board. When you take a mission, but already have the cargo, it doesn't display in the mission screen unless you close and reopen it. Taking another mission also refreshes the board, so the mission displays. Donation missions are fine though.
