How do I record in-game demos (Replays viewable from any angle)?

You'll see he played back the recreation of his ride as if from a steam demo. The game is running in real time, but placing each individual prop as he did when he made it. It looks like a steam demo, but I have no idea how to enable such a feature in a non-source game.

What I'm talking about is the ability to record your gameplay and play it back in real time (not a video), so that you can pan around and view it from any angle. You can see in the video there is no GUI and no visible trial-and-error placement/manipulation of objects. They all just get shown being plopped down, as if he were a 3rd party observer.

This is what I'm trying to figure out.
 
I believe he does that by building a certain amount of pieces, then using the undo (Ctrl+Z) tool to delete them, and then he records it all being rebuilt by using the redo (Ctrl+Y) tool.

Ah yes, he got back to me and that is in fact how he did it. Super simple, I can't believe I hadn't thought of that.
