How do you keep track of what materials you need?

You can see what you currently have, under the cargo tab on the right menu. As for what you need for each upgrade, I've never found an in-game solution. I rely on google searches and scribbling things down.
 
I keep a google drive document open that I update with notes for what I need or what needs engineering on what ships, sometimes I will buy modules, leave them in the station, then travel to the engineer, summon all the "Shield generators/weapons/boosters/whatever" to the engineer I am at. Wait til they arrive, then engineer everything, the move to the next engineer and do the same... I usually engineer 2-3 ships a time like that, and then fly back and pull all the engineered modules to my home base and put them in the ships they below in. I do most of my running around in either the cutter (because it can hold the largest modules) or the Krait Phantom (cause its fun).
 
 
I tend to only check when I want to do some engineering, and just work out if I'm short of anything. If I am, it usually involves a short trip to a trader to sort out. I've got into the habit of collecting materials and scanning (wake/ship) at every opportunity, which means that when I do want to engineer something, I don't usually have to look around for materials.

I do sometimes use EDDI, but that is usually just to get my ship into Coriolis. It keeps track of materials and data though too, so if you want something for that I'd recommend it.
 
PS4? - You can still use INARA but you have to enter your current quantities by hand.
I did it once (PC) before Market Connector was patched to include mats. It's a pain, but worth doing if you aren't min maxing mats.
 
I find it very handy if you plan out your build before even touching engineers, using Coriolis for example. Then you can get a complete list of all the materials you need for that build. Combine that with the crafting function in Inara (which automatically imports your ship data) and engineering suddenly becomes very simple - when you clearly see what you're working towards it all becomes much less tedious.
 
I used to jot everything I needed for an upgrade on shopping list paper and then would spend ages at all the material traders to get everything I needed, but now I try to keep all my materials balanced with regular trips to the traders during play so when it comes to engineering time just a quick glance at what I have usually confirms I am covered.
