How do you play? Vendors etc

Just wondering how you all choose to play the game. I ask this because I started off building a park and keeping it closed, but obviously all the vendors got bored and quit. So I opened the park and hired new vendors, but now I find that some stalls stand empty for ages and I've got too many staff to keep track of and assign them to a preferrered stall, so I'm in a bit of a muddle and feel like I've lost control of it. If I shut the park again, will all the vendors quit?

Then I wonder if I should build new rides straight into the game or into a new one first and then save the blueprint and add it that way?

So, park open or closed while building?
 
In early stages of park I close park build 5 rides and have 1 x toilet, 1 x information, 1 x medical, 2 x drinks, 1 x food, 1 x gift stalls and 1 x rest room for vendors. I employ 1 or 2 vendor/s for that zone area to cover the shops. Once first area has been opened and making money move on to second area and repeat.
 
I was playing career and am now playing editor-tweaked career scenarios. I usually work with the park open, but the game paused, so I don't have too much trouble with vendors quitting. That having been said En Anu has good points: use the new staff features to keep your vendors happy, they'll be less likely to quit. And if I was working on a closed park, I'd close all the stalls individually (that used to keep the vendors from quitting, not sure it does now).
