Griefing isn't interesting. You won't find the satisfaction you seek by attacking explorers - they're friendly and defenseless and you become just another loser who makes the world a worse place instead of a better place.
When you find that Elite is getting boring, you can either fix that or you can burn yourself out and never get to enjoy the game again.
If you want to fix the boredom, you do that by exploring some of the unplayed gems and masterpieces sitting idle in your Steam library for a few months while FDev continues to pour new content into the game, so that when you come back, you're fresh, you're rested, and you're hungry for Elite... and there is a whole lot more completely new Elite for you to discover, and you can't wait to start!
If you want to burn yourself out on the game and end up never able to properly enjoy it again, you continue on the path you've set; making yourself do stupider things in the vain hope of grinding out the flimsiest hint of novelty.
Don't burn yourself out like this - you'll just wreck the game for yourself, and it's becoming a better and better game every year, and you won't get to enjoy that.
