If you mean, how many can dock, it's essentially unlimited since each commander docking can be in a separate instance (especially if they arrive at the carrier in solo), just like a station.
If you mean a single commander using the shipyard, maximum 40.
And if you mean buying stock for an installed shipyard service, the bought ships take up cargo space, so you'll be limited by whatever capacity is left after everything else.
