Never got them until now and I cannot figure it out. Can you even? I have a mature centipede, bred at my zoo, and can't release it.

There's a warning that says since they were adopted for cash they cannot be released, implying that they could otherwise.
You can't release exhibit animals to the wild. You can, however, sell them for cash only.
I'm not sure if there is a difference between Career and Franchise, but in Career you definitely can release exhibit animals.
Whilst there isn't a button to do it when you have the animal selected (like there is for habitat animals), you can do it from the overview that lists all your animals. Just highlight all the ones you want to ship out, just like you would with habitat animals, and release to wild!

Unless my game is bugged I can't release exhibit animals to the wild (Franchise Mode):
The screenshot was simply to demonstrate that the 'Release to Wild' button will not highlight for exhibit animals.
Well I could only comment by the screenshot you gave which showed the 0.0 year old animal
For normal animals that would cause the button to be disabled, hence the comment.
It looks like you can on career, but not franchise. On career it’s kinda obligatory anyway, since you can’t sell animals.
I guess you can on sandbox too? Didn’t play that mode yet.

Just to complete the modes: It's possible in ‘Challenge’ mode as well.

Maybe it’s disabled on Franchise to prevent people to farm CC from 50 exhibits while not spending any. It could become a huge source of CC and people already breed habitat animals dry, so I understand the logic (if this is the reason).

Releasing exhibit animals to the wild is how I got the "Rebuilding" achievement extremely quickly. Lehman's Poison Frog are eligible for the achievement and don't need much encouragement to have over 9000 babies at a time.
