How to acquire specific stolen goods for missions

Fit a cargo scanner and scan npcs to see what they are carrying, then pirate them.

Alternatively, get a friend to buy what you need, jettison it (not abandon), then scoop it up.
 
Abandon them. They're piracy missions, but they're not very good. If they asked for a TYPE of cargo, say "Steal X tonnes of minerals", it'd be fine.
 
If you prefer not to pop open traders and get a bounty on you for that, you can just hang around a RES or beacon and pick up what pirates and traders leave behind. It will all be considered stolen and as long as the authorites don't scan you, none will be the wiser!

You could also engage in some bounty hunting and sometimes the pirates will drop their cargo when the fight is turning sour for them. Also, USSs with salvage can sometimes have what you are looking for.
 
I've been searching for two tons of stolen Indite all afternoon. At least it gets me jumping in & out of USS and been picking up some bounties. I did eventually go and outfit the Cobra a'la 'Bluebeard' with a Cargo Scanner, a Hatch Breaker and even an FSD Interdictor.

BUT... my grumble is that for some other missions FD and the game creates those opportunities. Take a mission to find 'Ancient Artefacts' in XYZ-neighbouring system? Jump into XYZ and within the first half dozen USS you'll find the target cargo. Take a mission to kill pirates in XYZ? Once again, within a few USS you'll find the game presents the targets (and post v1.3 they are even labelled in red now "here be pirates, dummy" (or some such not-needed text.... "shoot the hinges", anyone? :) ).

So why with the "find [xx] tons of stolen [routine commodity]" do I either not find it floating free in a USS from a recent fight, O not find it being dropped by ships I'm shooting? Or, a bit like the big flashing "pirate" marker (even when I've not KWS scanned them), could I get a big flashing "this ship's got the cargo you need" even without a cargo scan? :)
