i know how to change the ui color for ships but that doesn't change the ui color for the menus. how can i do that? is that even possible?

Install DrKaii's EDProfiler - it does all the NO2O four schemes, and even let's you preview them.
I tried a few different schemes but IMO "mocha" is the one I've stuck with (and an FOV of 75)
