How to explore "Unexplored" planets/stars?

When I go into a system with my discover scanner, using that seems to give me a map of all the planets. Is there a way to further explore the items labeled "Unexplored." I've tried going near them and running the discovery scanner again, but it doesn't do anything.

Is there another item I need? If so, which slot does it fit into?

Target them, face them and get close. You should see "scanning" in the target info box (same as with ships when looking at their name, wanted status, etc.).
I don't think it affects exploration payouts though.

It definitely does affect the payments, and if ou have a detailed surface scanner it boosts them even more

Just to add to this. It doesn't give you a map of all objects in a system. It finds large masses in a sphere around you with limited range.

If you have to travel for a minute or so to get in scanning range of some of the objects you found initially then it pays to give the D-Scanner another blast as you can often find more. Also keep an eye out for moving "stars" as you fly around scanning. You can spot these with your naked eye but they could actually be out of range of your D-Scanner when you first enter the system.

If your serious about exploration a detailed surface scanner and a advanced discovery scanner is the way to go. The advanced discovery scanner is worth the 1.5 million credits in the long run. It cuts down on hunting those elusive B/C/D stars in systems.

Decided to assess the value of individual scanning

If you have a Detailed Surface Scan then I believe the value of the data varies with the composition of what you find as well as the quantity of scans done. I do have one and the numbers below are the results of using it

Unexplored system, initially discovered 18 bodies including the star - No value checked

Scanned a total of 8 bodies including the star - 8885

Discovered an additional 9 bodies - 11338

Scanned an additional 4 bodies (one with high metal content 33%) - 15358
These were around and included a second start in system

As you can see there is additional credits for detailed scans at least, the return can be substantial but if the system has multiple stars it may not be cost/time vs return effective. As a bonus the station around the second star has some excellent equipment, got an A2 fuel scoop that maxes out at 75 per second.
